La Manne Bakery was born from the shared vision of Chef Matthieu Lagarrigue and Dr. Thomas Chan, a partnership that seamlessly blends culinary artistry with astute business acumen. Together, they bring over 60 years of combined experience to the table, creating a bakery that honors traditional French techniques while embracing modern efficiency and global market reach.
Chef Matthieu Lagarrigue brings over 26 years of outstanding experience in the pastry industry, embodying the authentic heart of French culinary tradition. As an Executive Pastry Chef with an entrepreneurial spirit, he holds prestigious French certificates in bread making, pastry, confectionery, chocolate, sugar works, and ice cream production, as well as ISO 22000:2018 certification in hygiene and management.
Before founding our company, Chef Lagarrigue successfully established and operated four bakery and pastry shops in France, demonstrating deep expertise in both artisanal production and business operations. His ten years in Vietnam as a Pastry Trainer, Executive Pastry Chef, Production Manager, and R&D Manager have enabled him to adapt French recipes to local ingredients and market preferences while preserving authentic flavors.
Dr. Chan contributes over 35 years of international business expertise, bringing strategic vision and operational excellence to our partnership. Holding a Ph.D. in Industrial and Operations Engineering from The University of Michigan, he combines academic rigor with practical business acumen gained from founding and managing 20 companies across Canada, China, Hong Kong, Thailand, Philippines, and Vietnam.
His deep understanding of the Vietnamese market comes from over 20 years of experience establishing and managing 10 companies in Vietnam, including hospitality management schools, kindergarten schools, English centers, restaurants, and French bakeries. This extensive experience provides invaluable insights into local regulations, supply chains, and market dynamics that benefit our international expansion strategy.
